Behind the Grill – Meet the Team Bringing Barbicrew to Life

At Barbicrew, we believe unforgettable moments are made with incredible food, authentic hospitality, and a team who truly loves what they do. With over a decade of catering experience across Sydney and NSW, Barbicrew has become known for more than just great barbecue — we’re known for delivering warmth, flavour, and connection to every event we serve.

At the heart of our team is Jose Santos, co-founder and master of the flame. Born in Brasília, the capital of Brazil, Jose brings 18 years of culinary expertise to every skewer and sizzle. He’s worked in some of Sydney’s most respected kitchens — including Wildfire and The Grounds of Alexandria, where he helped launch their now-iconic barbecue kitchen. Known by many as “The Barbecue King”, Jose blends natural, organic ingredients with bold Brazilian flavour, turning every dish into a mouth-watering experience. For him, cooking is a form of storytelling — and his story is one of passion, simplicity, and a deep love for his culture.

Alongside him is Balu Gimenez, Barbicrew’s co-founder and creative force. Born in São Paulo, Brazil, Balu came to Australia in 2006 with a background in marketing, publicity, and events. With a flair for bringing people together and years of experience in the wholesale meat industry, he’s now one of the most recognised personalities in Sydney’s Brazilian community. From producing major festivals to orchestrating unforgettable events, Balu brings the energy, vision, and commitment that makes Barbicrew stand out.

Together, Jose and Balu form the perfect blend of culinary excellence and event expertise. Their mission? To serve Sydney a true taste of Brazil — done the right way.
